Intro
A great weekend breakfast Preparation and cooking time: 30/45mins This is one of my favourite breakfasts. It takes a while to prepare so I usually have it at the weekend.
What you need
- Mixed veg suck as peppers
- Onions
- Garlic
- Mushrooms
- Potatoes
- Chopped Passata (sieved tomatoes) or two cartons of chopped tomatoes
- Dash of oil
- Herbs (fresh or dried-oregano or basil)
- Eggs: 1-3
- Spinach (optional)
How to do it
- Fry the veg until softened
- Add passata or tomatoes, and a few dried or fresh herbs.
- Simmer on the hob until the veg is cooked.
- Crack the eggs on top of the tomato and veg mix cover and leave for 5 mins.
- Add spinach (if using) and cook till the eggs are done.
