A great weekend breakfast Preparation and cooking time: 30/45mins This is one of my favourite breakfasts. It takes a while to prepare so I usually have it at the weekend.

What you need
  • Mixed veg suck as peppers
  • Onions
  • Garlic
  • Mushrooms
  • Potatoes
  • Chopped Passata (sieved tomatoes) or two cartons of chopped tomatoes
  • Dash of oil
  • Herbs¬†(fresh or dried-oregano or basil)
  • Eggs: 1-3
  • Spinach (optional)
How to do it
  1. Fry the veg until softened
  2. Add passata or tomatoes, and a few dried or fresh herbs.
  3. Simmer on the hob until the veg is cooked.
  4. Crack the eggs on top of the tomato and veg mix cover and leave for 5 mins.
  5. Add spinach (if using) and cook till the eggs are done.
