Intro
This is very easy tasty and is suitable for the whole family. You can alter the recipe slightly by altering the amount of chilli used. I use a tagine for this recipe but you can use an over pot or pan with tin foil to seal the top (just make sure it does not have plastic handles.
What you need
- Chopped onion (red one works well)
- 2/4 cloves of garlic (depending on what level of garlic you like)
- Pepper chopped (red, green, or yellow all work here)
- Puy-Lentals (can use chick peas if dont have them)
- 2 big chicken legs (I used Free Range and Organic)
- Passata (large carton)
- 4 chopped tomotoes
- Smoked Paprika
- Chilli Flakes (optional)
- Olives (green or black work here)
- Chicken stock: half a pint (home made is best)
- Herbs (I used dried oregano)
How to do it
1) Fry the chicken so it is brown and sealed on both sides and remove
2) In same frying pan add chopped onion and fry for few mins until soft
3) Add garlic and fry for 1 min
4) add everything else including the chicken legs.
5) Put in the oven on a low heat for 3/4hrs (100 degrees).
6) Serve as it is of with salad or some steamed green veg. Nice!!!!
