Summer in a dish, fresh, tasty, nutritious. It is also very simple and as always why not make more and have for lunch the next day? You can make it vegi by replacing the Chicken with chickpeas.

What you need
  • Chicken legs, thighs (Free range and organic if possible).
  • 4/5 raw beetroot, peeled and chopped into bit size pieces.
  • Baby tomatoes (handful)
  • Half and avocado (chopped)
  • 1 lemon (use rind and juice)
  • 3/4 cloves of garlic (crushed)
  • Small handful or pumpkin or sunflower seeds
  • Splash of olive oil
  • Tea spoon of coconut oil
  • Red pepper
How to do it
  1. Mix garlic, lemon rind and juice and coat the chicken with it. Ideally you want this to rest for few hrs. But if don’t have time don’t worry.
  2. Put beetroot into an oven dish and cook with c/nut oil for about 45min on 180 in the oven.
  3. Also do the same with the chicken
  4. When the beetroot is cooked remove and mix pepper, seeds, oil, toms and avocado. Serve with the chicken and enjoy!!!
