Intro

Two things work so well here and once you have tried this you will never go back to using mincemeat. This is super tasty and so amazing, you won’t be able contain yourself.

What you need
  • Beef Brisket (full joint)
  • 2 cups of strong coffee
  • Smoked chilli’s
  • 4/6 cloves of garlic
  • Punch of sea salt
  • Lots of black pepper
  • Can of kidney beans (rinsed)
  • 2 medium onions chopped
  • 2-3 cartons of chopped tomatoes
  • Teaspoon of cumin (whole is better, ground is fine).
  • Big squeeze of tomato purée
  • Additional water if needed
How to do it
  1. Seal the meat by frying it in a bit of oil and add to slow cooker or large pan.
  2. Fry onions then garlic in the same frying pan and then add this to the beef.
  3. Toast cumin in the frying pan and also add this (whole is fine)
  4. Then add coffee, chilli’s, salt, water (if needed) back pepper and tomato paste.
  5. Cook for about 6/8hrs depending on the size of brisket
  6. Ideally cook if the day before you are going to eat it and eat it the next day. This makes the taste 100 times better.
